Youssef’s story

Youssef’s family has sold spice in the same souk stall since his great-grandfather’s time. He grew up as the kid weaving trays of mint tea through the crowds, and he still greets forty people by name between Jemaa el-Fnaa and his front door.

His food experiences happen in his family’s riad, where his aunt — a dada, a traditional Moroccan cook — leads the cooking and he leads the storytelling. Day trips run to Berber villages in the Atlas foothills where his mother’s family farms.

He is adamant about one thing: guests pay no “tourist tax” anywhere they walk with him.

“In the souk you are either a stranger or somebody’s guest. With me, you are the second one.”
